Mar Pizza Deploys RFID Technology to Improve Temperature Visibility

The Pizza chain Mar Pizza is using ZigBee technology-based IoT technology from Unified Office to manage the temperature in 70 restaurants. The system uses a wireless temperature sensor to send information to the network hub within each restaurant to manage the sensory data on the cloud server. The system is designed to enhance food safety compliance and eliminate waste by improving food inventory management. In addition, Robert Scheiper, vice president of Mar Pizza, said he expects the program will also reduce energy consumption.

Headquartered in Paramount, California, Mar Pizza operates a total of 70 stores. The company hires 1,000 to 5,000 employees.

The fast food industry is heavily regulated by health agencies and fast food restaurants must ensure that food is stored and cooked at the proper temperature. Restaurant managers should use a variety of techniques to monitor temperature, but many manual systems are too time consuming. Scheiper explains: "A system that provides real-time alerts in potentially dangerous situations can significantly reduce the workload."

For managers managing multiple stores, real-time alerts and historical data verify that the restaurant follows the process. Scheiper said Mar Pizza's primary goal in implementing this solution is to ensure that temperature logs and problems are detected.

Founded five years ago, Unified Office manages the customer's business communications by providing VoIP services. For the past three years, the company has been serving Mar Pizza. The service is implemented by a hybrid cloud architecture for routing phone calls and the telephone network.

Recently, Unified Office introduced an IoT solution that includes sensor data. Ray Pasquale, President of Unified Office, explains that the solution helps companies manage business information outside of the phone and communications networks.

The company uses a two-pack cigarette-box-sized hub in each store and a telephony server appliance for VoIP customers. The network hub uses built-in ZigBee, Z-Wave and Bluetooth repeaters to collect sensor data to receive sensor information and forward it to cloud-based servers. The cloud server then manages and analyzes the data. Unified Office uses network hubs and sensors provided by third-party vendors.

In the past year, Mar Pizza has experimented with this technology in about a dozen restaurants, installing sensors in the freezer and in the work area for temperature detection. The sensor reads the temperature at predetermined intervals and transmits the data to the network hub, which is then forwarded to the server using the network hub. The restaurant manager or other authorized person can then log in to view the real-time and historical temperature readings for each restaurant.

The sensor also detects motion, allowing users to create a series of rules within the system based on occupancy, such as changing settings for heating, ventilation and air conditioning (HVAC). In addition, the system also uses a door contact sensor to detect if the freezer door is open and its duration. In the latter case, the software can determine if the problem exists and send a reminder to the authority.

Pasquale said the data not only provides real-time alerts, but also historical data analysis. For example, he explains: "When you have a hundred stores, you have little or no sense of whether the compressors in a particular store have failed, but if the sensor system detects a warming in a cooler for a while, Faulty compressor or other equipment. "The system also reduces energy costs because it can detect if it is over-cooled or if the freezer door is open for a long time.

The technology also provides health inspectors with temperature measurement records to confirm that the temperature of a particular restaurant has been read and recorded and that it is within safe limits.

According to Pasquale, in terms of reliability, the company chose a ZigBee technology solution based on the IEEE 802.15.4 protocol. "We took a very cautious approach to developing and deploying the system," he said, and the company is trying to ensure the technology is safe and effective until it is officially launched. "

United Office plans to begin selling solutions in the second quarter of this year. Pasquale said the food industry is just one area in which technology can benefit, and other industries, such as hotels, can also deploy the system.

With the deployment of the technology, Scheiper said, we can see the temperature data and its warnings in real time. The solution also allows the setting of thresholds and multifaceted alerts.
